I love Grits! But recently when I was hoping to have a Poached Egg on Grits for breakfast; I found I had no Grits in the house. What to do??? I decided to experiment and substitute hot Oatmeal for the Grits. So I placed a Poached Egg on the mound of hot Oatmeal, and topped the mound with butter, salt, pepper, and a dash of creole seasoning. It was actually quite good. I know it sounds gruesome, but I actually had seconds. And to think it was a heart healthy breakfast too! TT
